Blue Moon® Belgian White was our first year-round release back in 1995. It started with our brewmaster, Keith Villa, wanting to craft a beer inspired by the flavorful Belgian Wits he enjoyed while studying brewing in Belgium. He brewed his interpretation using Valencia orange peel versus the traditional tart Curaçao orange peel, for a subtle sweetness and added a touch of coriander to provide balance. Lake Tribe Red Cloud is a very hop forward IPA with lots of pine and earthiness. Each sip is like a brisk walk through the woods. Let this beer warm up a bit, and you'll notice some citrus notes come out of hiding. Loaded with hop flavor and only a moderate amount of bitterness for an IPA, by adding nearly all of the hops at the last minute. The malt bill has just enough caramel malt to give it a signature red hue and with a dash of rye to add a subtle spiciness to play off of the hops. This anomaly of imperial IPA starts with the mash. More than just using a huge volume of malt (and we do fill our mill to overflowing), we mash our grain aggressively to yield a higher ratio of fermentable vs. unfermentable sugars. This allows yeast to metabolize nearly all sugar, which both boosts the ABV and cuts the malt sweetness. At the same time, yeast and hops collaborate on their own magic.
